I added tofu to the green chile sauce that I am pouring over the enchiladas to give it a sour cream type texture.
I loved sour cram when I could have it .Blood type O's can not have sour cream .
Since my lovely daughter is into "tofu" I have learned a bit about tofu in her visit recently.
So I ventured into a sauce on the fly that would mimick a "canned enchilada sauce "
I used 1/2 of a firm pkg of tofu . Blended it w salt pepper garlic and onion powder to taste in the food processor until creamy. Reserving enough for a dollop of creamed tofu on each enchilada. I then added about 2 cups of green chile to the creamy tofu .
I will pour this over it and bake until bubbly .
That's my story and I'm sticking to it .

Removing foods like wheat and corn because they interfere with insulin efficiency and slow a blood type O's metabolic rate.
In a perfect world I could live without everything . I do on a very rare occasion have some foods but (very little)that I shouldn't but NEVER wheat or corn.
I write about how I did the every day and the emotions that go with it.
I am in the process of writing a cookbook that has all of my recipes I have created to help on this journey.
My purpose in this blog is to encourage and equip people who are struggling with weight loss and eating healthy.
Eating healthy is the only way out.
I ate my way in this, so I ate my way out.

Try silken tofu next time - it will give you a smoother finished sauce. Also, if you add a little olive oil (just a tiny bit), you'll get the satisfying fat flavor thing that happens with sour cream. You can also purchase a soy sour cream called Sour Supreme - made by the Tofutti company. Good stuff.
